I don’t have a lot of counter space in my current kitchen, so vast amounts of food prep are a complicated matter. I don’t have much in that line often, but this is of course canning season.
My garden this year is a seed-only garden, so I wont have that produce to can. I did, however, have a large box of peaches this week

Being seconds, the peels could not be left on, so I had several days of peeling and cutting and preparing peaches. I did 12 2.5cup jars of pieces in syrup, and then the rest I used in a very large pot of jam


Peach vanilla jam – 14 jars
I ALMOST wrecked the jam. I smelled the scorch, but got it off the heat and poured the liquid off of the burnt matter before it tainted the taste. Whew. That would have been a giant bummer.
